What the boss needs:

INGREDIeNTS

1 Cup Almond Flour

1 Tablespoon Ground Flaxseed

3 Tablespoon Water

OPTIONAL SEASONINGS

1 Teaspoon each salt, pepper, sweet paprika, lemon pepper, garlic powder, mustard powder, onion powder, dried herbs, fresh herbs

1 Tablespoon sunflower seeds

1 Tablespoon pine nuts/walnuts chopped

1 Tablespoon cranraisins or dates 

1/4 Cup parmesan or other hard cheese

How to make it like a boss:

  • Preheat oven to 350°

  • In a medium-sized bowl add water to the ground flaxseed meal, and let it sit for 2 min.  Because it's an egg replacement, the flaxseed will get a little thicker and become an egg-like consistency.  TIP: You can also substitute 1 egg if you like. 

  • Add the almond flour to the flaxseed mixture, and stir it up with a spatula or with your bare boss hands, until it becomes dough. The dough should hold together, but it shouldn't be super wet. It should be a bit of a gummy consistency. If it isn't holding together, then add a little more water. If it's too wet, then add a little more almond flour.  You got this girl!

  • Now is the fun part!  Add any ingredients you want to the dough. I like to divide the dough into two dough balls so I can make 2 different flavors of crackers. I love adding fresh herbs like dill, oregano, lemon thyme, or basil finely chopped with sunflower seeds. Also, dried cranraisins or dates and pine nuts are really nice!  And for the non-vegans, you can even add some parmesan cheese.

  • This part is VERY IMPORTANT... use Parchment Paper!  TIP: Parchment paper is magical.  It will cut your clean up time in half.

  • After you've made the dough into a ball, place it on a 2 foot long piece of parchment paper. Flatten the dough out a bit with your hand.  Next, place another 2 foot long piece of parchment over the top of your dough ball.

  • Use your rolling pin to roll out the dough to your desired thickness.  The more muscle you put behind it, the thinner and crunchier the crackers will be! Around 1/8 inch thickness is what you're going for. The dough will not roll out in a perfect shape and it doesn't need to-you're the boss, so it can look however you want. TIP: if you don't have a rolling pin you can use a bottle of wine or olive oil bottle to roll out the dough.

  • Once the dough is rolled out nice and thin, take off the top layer of magical parchment paper and sprinkle with whatever seasonings you want. At the very least, add salt and pepper.

  • Now take a knife or pizza cutter and cut the dough into bite-sized squares, around 1/2 inch on all sides.

  • Carefully move the parchment paper onto your baking sheet. If it's too long, you can take scissors and cut the paper in half and bake your crackers in 2 batches.  

  • Cook for 10-12 min or until golden brown.

  • TIP: the crackers on the outer edges will cook faster, so remove the crackers on the edge at around 8 min allowing the ones in the middle to continue to cook until golden brown.

  • Put the crackers on a cooling rack or in a bowl to cool (just make sure to take them off the baking sheet or they will continue cooking).  You can keep the crackers in a ziplock or tupperware to eat later, but trust me they won't last long, and you'll make a double batch next time.  Eat with hummus, cheese, or just on their own!
