Cinnamon Rolls

Keto/Paleo

What the boss needs:

INGREDIeNTS

Dough

2 1/3 Cups Mozzarella Cheese shredded

2 OZ Cream Cheese

1 1/2 Cup Almond Flour

2 Tablespoons Coconut Flour

1 Teaspoons Baking Powder

4 Tablespoons Psyllium Husk Powder or Flax Seed Meal

1/2 Teaspoons Salt

1 Teaspoon Pure Vanilla Extract

1 Tablespoon Apple Cider Vinegar

Organic Free-Range Eggs

1/2 cup Bocha Sugar or Granule Erythritol 

1/4 Cup Grade A Maple Syrup 

Dough filling 

2 Tablespoons Room temperature butter 

4 Tablespoons Brown Swerve Sweetener 

1 Tablespoon Cinnamon 

1 Tablespoon Nutmeg

1/4 Teaspoon Pumpkin Spice

1/4 Teaspoon Allspice

Optional Additions to filling

1/4 Cup Nuts! Walnuts, pecans, sliced almonds, etc. 

Cream Cheese Icing 

2 Tablespoons Confectioners Swerve 

2 Tablespoons Cream Cheese

2 Tablespoons Full-Fat Coconut Cream

1 Teaspoon Pure Vanilla Extract 

How to make it like a boss:

  • Preheat oven to 350°

  • Line a baking sheet with magical parchment paper, and place it to the side. 

  • Let's start by making our low carb "Fat Head" dough.  Place the mozzarella cheese and cream cheese in a microwave safe bowl and microwave for 1 min.  Take it out, stir well, and then return it to the microwave for 30-second intervals until it's all melted together in cheesy goodness.  If you are anti-microwave, which we all should be, you can do the same process on the stove.  

  • Now it's time to stir in your almond flour, coconut flour, salt, baking powder, and psyllium husk powder or flaxseed meal.  (*Note: If you use flaxseed meal- in a separate bowl, add 1 teaspoon of warm water to your 1/4 teaspoon of flaxseed meal and whisk. Let it sit for 1-2 min until it becomes a thick liquid, similar to the consistency of an egg yolk. Then add to your cheese mixture with other dry ingredients.) If the mixture starts to get too thick, you can return it to the microwave or stove for 20-30 seconds.

  • Add 1/2 cup of granule erythritol or Bocha Sugar. NOTE: Bocha sugar is an all natural sweetener made from Kabocha, a Japanese squash. It is easy to metabolize and is great for a Keto or diabetic diet.  Plus, unlike Stevia, it actually tastes like cane sugar!

  • Next, beat the egg thoroughly, and add it along with the apple cider vinegar and vanilla to batter. Stir until it's completely combined.

  • It's that special time again when we take out our magical parchment paper!  Place a large piece of parchment paper on the counter, and sprinkle it with almond flour. Put the dough ball in the center of the sheet of parchment. Then cut another piece of parchment paper the same size, and place it on top.  Now it's time to roll out the dough into a rectangular shape-it doesn't need to be perfect!

  • Take off the top sheet of parchment, and sprinkle the filling mixture of brown swerve (its a brown sugar substitute), cinnamon, nutmeg, pumpkin spice, and allspice over the entire rectangle of dough. If you like nuts, now is the time to add those to your dough as well.   

  • Very carefully, like only a patient boss can, start at one end and using the magical parchment paper, begin to roll the dough up into a cylinder shape.  Using the parchment paper as you roll will really help you because this is a very sticky dough, and you need to get a VERY tight roll or the rolls won't hold together.  So use the parchment to roll a couple inches of dough, then take the parchment down a bit and roll some more, and repeat.  You aren't rolling the parchment up in the dough, you are just using it so your fingers don't stick to the dough and so you can make that roll tight!

  • Take a sharp knife, and cut the dough into slices.  You should have around 8 circles of gorgeous cinnamon rolls. 

  • Now sprinkle your magical parchment paper-lined baking sheet with a little almond flour (to ensure the rolls won't stick when baking). Then place your cinnamon rolls on the sheet, and give each a little breathing room.

  • Bake for 15-20 min, or until the rolls are golden brown on the top and perfectly crispy on the edges.

  • While the rolls are in the oven, it's time to make the icing!  I recommend using Boss Mom's amazing, one of a kind, coconut cream icing!  But if you just love traditional cream cheese icing, those ingredients are listed above as well. Using a stand mixer or some major muscle, whisk together the cream cheese, full-fat coconut cream and vanilla on high until fluffy.  Then add in the confectioners swerve, and whisk until creamy and delicious! Lastly, add in the maple syrup to taste. Everyone has a different sweet tooth palate, so you can start with less confectioners sugar and maple than I recommended in the ingredients above, then add from there. You are the BOSS so make it as sweet as you like!

  • Remove cinnamon rolls from the oven, and let them cool.  But once these babies are just slightly warm, slather on the icing and enjoy!
