Bagels

Keto/Paleo

What the boss needs:

INGREDIeNTS

3 Cups Blanched Almond Four

1 Cup Tapioca Starch/Flour

2 Teaspoons Baking Powder

2 Teaspoons plus 1/4 teaspoon Sea Salt 

1 Teaspoon Sea Salt/Kosher Salt

2 Tablespoons Monk Fruit or teaspoons Bocha Sugar

Grass Fed/Organic Egg

2 Tablespoons Apple Cider Vinegar

Toppings of your choice 

OPTIONAL Toppings

1 Tablespoon nutritional yeast

1 Tablespoon fresh herbs

1 Tablespoon sunflower seeds

1 Tablespoon sesame seeds

1 Tablespoon poppy seeds

1 Tablespoon parmesan or other hard cheese

How to make it like a boss:

  • Preheat oven to 400°

  • Fill a 10" pot half full (5 inches) with water. Add a pinch of salt, and slowly bring the water to a boil. TIP: 1/4 teaspoon=a pinch of salt.  I know right?! How did we not know that! 

  • In a medium-sized bowl, combine the almond flour, tapioca starch, salt (2 teaspoons), baking powder & monk fruit sweetener or Bocha sugar. NOTE: Bocha sugar is an all natural sweetener made from Kabocha, a Japanese squash. It is easy to metabolize and is great for a Keto or diabetic diet.  Plus, it actually tastes like cane sugar!

  • Before the water is boiling aggressively, take out 1 cup of water and set it aside.  Yes, there is a good reason for this!

  • Now add 2 tablespoons of apple cider vinegar and that half cup of warm water to the dry mix you just created, stir it up with your hands or a spatula and magically you'll have dough. If the dough seems too dry, add some more water or if it feels too wet and sticky, add extra tapioca starch. Next, make the dough into a round ball. I mean... how amazing does it feel to make your own dough?! #ilooklikeiknowwhatimdoing

  • I like to make mini bagels with the dough, which gives me about 11 cute little baby bagels. You can also make full size bagels and get around 6.

  • Get out your baking sheet, and line it with magical parchment paper.

  • Take a small piece of dough, and roll it around in your hand to make a round ball. Now, flatten the dough ball out a bit, and place it on the baking sheet. Next, use a utensil or your finger to make a small hole in the middle.  Then shape the bagels with your fingers and palms, making them into your desired bagel shape.

  • Remember the water that's been boiling? In groups of 3 (if they are mini bagels), carefully place the bagels in the boiling water so they will 'set'.  Remove the bagels from the pot once they rise to the top of the boiling water, or after about 1 min. It's best to use a strainer type spoon with slits in the bottom to remove them. Place the bagels back on the magical parchment paper-lined baking sheet. 

  • Now place your bagels in the oven, and bake them for 10 minutes.

  • While your bagels are in the oven, beat 1 egg with a fork or a whisk.

  • After 10 minutes, remove the bagels from the oven and brush each one with the beaten egg.  I like to brush both the tops and bottoms of the bagels for a crisp coating on all sides.

  • Now it's time to add the toppings of your choice!  In the pictures below I used black sesame seeds, sunflower seeds and fresh herbs (basil, thyme, oregano). 

  • Turn your oven up to 425° and bake for another 5-10 minutes depending on your oven and desired texture.  The important part is to bake your bagels until the bottoms are a nice golden brown!    

Boss Ladies, you just made your own bagels and they are grain free!  I mean who are you?!  Well, you're a #boss that's who you are.
