Keto/Paleo/Vegan

What the boss needs:

INGREDIeNTS

1 1/2 Cups Stevia or Monk Fruit Sweetened Dark Chocolate Chips

1 Cup Almond Butter

1/4 Cup Coconut Oil

1/2 Cup Grade A Maple Syrup, Honey or Agave

1/2 Cup Finely Shredded Unsweetened Coconut 

1/2 Cup Sunflower Seeds

1 Cup Nuts of choice 

1 Teaspoon Kosher or Fleur De Sel Salt

OPTIONAL Additions

1Cup walnuts, pecans, macadamia, cashews, pistachios, sliced almonds, etc.

1/2 Cup finely shredded coconut unsweetened

1/2 Cup pomegranate seeds

1/2 Cup chopped cranraisins 

1/2 Cup chopped dates

How to make it like a boss:

  • Preheat oven-NOT! These are NO bake for the busy Boss Lady. #aintgottimetobake

  • Line an 8x8-inch baking dish with magical parchment paper.  The parchment won't fit well at first and will want to pop out, but don't sweat it because the paper will settle in once you pour the chocolate mixture over it. 

  • In a medium sauce pan, drop in your stevia or monk fruit dark chocolate chips, and cook on medium heat.  Stir with a spatula, allowing the chips to melt slowly. Make sure you keep an eye on the chocolate and continue stirring, or it will seize up or burn. TIP: You could do a combo of dark, semi-sweet, white, peppermint or caramel chocolate chips as well. Options listed below. 

  • Add the coconut oil and stir.

  • Add the almond butter and stir, letting it soften and melt. TIP: I like to use fresh ground almonds from the machine at the health food store because it makes creamy, fresh almond butter with no additives or preservatives.

  • Add honey, or other sticky sweetener like agave or maple syrup, if you aren't a honey fan.  

  • Stir all the above ingredients until they are completely combined and melted.

  • Next for the fun part!  You're the boss, so you can add anything you want to your chocolate bars!  I love adding sunflower seeds, walnuts, pecans, dates and coconut (I recommend using the finely shredded, unsweetened coconut listed below, so it's less chewy and doesn't have any added sugar).  If you add nuts, chop them up into small pieces or put them in a coffee grinder for a more finely ground experience (chopping up the nuts will allow the bars to hold together better). Stir all the nuts and seeds in until they are completely incorporated into the chocolate mixture. 

  • Now pour the mixture into the magical parchment paper-lined baking dish.  I take the spatula and smooth out the top so the bars are even on all sides.  

  • Lastly, I love to add kosher salt or fleur de sel salt (a special French garnishing salt, listed below).

  • Put the baking dish in the freezer for a minimum of 30 minutes or until firm.  Once firm, remove from the freezer, place it on a cutting board and slice it into bite-size pieces. Make sure you always keep your bars in the refrigerator, or they will soften.
